Savory Christmas Bites by Beth Webb Hart

When I was a child my family hosted a neighborhood Christmas party every year.  It was simple, casual, kids were invited and so were teachers (much to my dismay and mortification.)
From about 7 – 9 pm, our house was bursting at the seams with people of all shapes and sizes.  It was loud, boisterous and chaotic.  How I loved it!
Anyway, I have such vivid memories of my paternal grandmother, Punkin, who made these delicious cheese and sausage and cheese and olive savory bites that she was constantly heating up in the oven then passing around in a linen draped basket throughout the evening.
These are the perfect pick up food for a cocktail or family party.  They are easy to make, can be frozen and are the ideal ratio of cheese, saltiness, butter and flour.
Enjoy!
Cheese Sausage Balls
          3 cups Bisquick
          1 pound hot sausage
10 oz. Cracker Barrel cheese grated
Add all ingredients and mix well.  Form small balls.  Bake on ungreased cookie sheet for 12 – 15 minutes at 350 degrees (may be frozen and stored – baking time an additional 10 – 15 minutes if frozen.)  Yields 125.
Cheese Olive Balls
          1 stick butter
1 jar Kraft Old English cheese
          ½ tsp red pepper
          Salt to taste
          1 tsp. minced garlic
          1 cup flour
50 green olives, drained and dry
Mix and season to taste.  Roll olives in mixture to cover.  (Dip hands in flour before rolling into balls.)  Make balls then freeze them.  To cook put on ungreased cookie sheet.  Bake at 450 degrees until brown.
